cookie swap ~ secret recipe, shhh!

some of you may have been wondering where have i been!? i seem to have taken a little blogging hiatus, but scrappy jessi's holiday cookie swap has me coming out of hiding. why? because - i love cookies! this time of year i am baking more than usual - oh, if only we could survive on cookies, i'd be in heaven!

this is a very special cookie to me, actually it's a bar cookie, and i make it every year during the holidays, it reminds me of my sisters. this is one of those secret family recipes that has been passed along to a privileged few, and i'm sharing it with you against strict orders to never share it - ever! i hope your family loves it as much as ours, and that it makes it into your recipe collection to pass along for future generations to enjoy this wonderful time of year!

raspberry walnut cookie bars

preheat oven to 350 degrees
1 cup butter, room temperature
1 cup sugar
2 egg yolks
2 cups flour
1 cup finely chopped walnuts
3/4 cup raspberry jam

in a large mixing bowl combine, butter, sugar until mixed, add in yolks. stir in flour, add walnuts. form dough into a ball, cut in half and wrap one half in plastic wrap, refrigerate about 30 minutes. press remaining dough into the bottom of an 8"x8" pan. spread jam on top. roll out chilled dough into an 8"x8" square, and place on top of jam. bake 50 - 60 minutes. cool completely in pan before cutting.
